I was never in a situation where I had to choose which fliphone to buy, but most don’t have a normal headphone jack, with a decent number of them also using a fully proprietary headphone port. So I guess I’d look out for it having a normal USB connection and ideally a fullsize headphone jack, or at least one of those smaller diameter jacks.
I don’t know its source for stations, but Transistor has direkt links for many German radio stations and probably other regions too.
I still vastly prefer FM, DAB or Satellite radio, but when those aren’t available Transistor is a nice alternative.

I use this app for scanning documents, I just tried sharing a picture to the app and running OCR on that picture, which also worked fine, so it should also fit your usecase.
If your hate only goes towards touchscreens and not having physical buttons, Mazda is (or at least was) very anti-touchscreen. I haven’t done any research on their current stance or if they have good EVs, but a neighbor of mine was really happy with his Mazda ICE car for having a button for everything.
Imo it looks to be very bloated for what I want. I don’t need (or necessarily want) a GPS track for the whole journey, but rather just start and endpoint. I intend to tell the distance from my cars odometer.
Also I already started making my own app by now anyway and I’m far too committed to consider other options lol

Some other ideas I had:
Under the hood it’s also way more similar: LibreOffice uses the odt format internally (and converts docx to it on the fly, sometimes leading to some formatting weirdness). OnlyOffice on the other hand uses docx internally, meaning better compatibility with MS Office (but also some weirdness with odt files).
(I’ve used docx and odt as placeholders for all the other formats here, like pptx, xlsx, etc.)
I presume your phone can’t enter deepsleep if it’s not in Standby. I’m not that knowledgeable on that topic but another point (that might be practically the same thing) is AFAIK your CPU and GPU can’t shutdown, as your phone is still on and rendering a black image.
Wait InnerTune is abandoned?? That’s a bummer, imo it is literally the best music app, especially the caching is amazing.
The newer Sony Xperias sound like a good fit for you. I haven’t used one myself, but they’re pretty decent from what I can gather.
Also it seems as if Sony is the only phone manufacturer shipping flagships with headphone jacks and SD card slots.
On another note, I highly recommend the GSMarena Phone Finder for getting a general selection of phones that have the features you care about.

As for Switch emulation, yuzu still runs great, with many playable games on the deck. If you don’t have the AppImage or Flatpak already, make sure to get it from a reputable source.

It’s currently in early development and I don’t know how well it works, but Xournal++ mobile is a thing. Its desktop app is really good, so I’d expect the mobile app to eventually get there aswell.
Edit: Whoops skipped the drawing part, Xournal++ is more for note-taking. Krita is a good choice for drawing.
We always freeze all our bread, we don’t eat it fast enough for it to not go bad (is this a weird take??).
But yeah thawing bread in the microwave is roughhhh, we either use a toaster or just let it thaw at room temperature.
