The reduction in generics exposed through the public API is a welcomed change. It’s been a while since I’ve used Axum, but I remember enjoying everything except the effects the generics had on how I could make calls and pass things around.
I have been looking for a while now. The closest I have ever been was Anytype, but it is not as user friendly or refined as Notion because it is still in active development.

I haven’t figured this out either, but my wild guess is the greater protein content over carbs in regular flour. I’m thinking of things like keto meal bars, or something.
